My mother in law gave me this recipe for doughnuts for Chanukah. I think it is a French/ Moroccan recipe. Enjoy!
8 1/2 cups flour
1 cube of fresh yeast (2 tbsp dry)
3 yellow of egg
3 whole eggs
1 cup of oil
1 cup sugar
1 tsp salt
1-2 cups of warm water
Soak yeast in 1/3 cup hot water and 1tsp sugar wait for it to mousse. Mix with above ingredients. While mixing the dough add the warm water slowly, first one cup, if the dough is sticky than you’re good, if the dough is still hard add more water. Dough should be sticky/wet. Put in a bowl and cover with towels and let it rise for 2hours.
Once risen make balls and press them down with something sharp (the top of a small container, or a cup) and create hole in center with water bottle cap. Lay them all out on a towel and cover with another towel let it rise for another hour. In the meanwhile warm the oil. Put one by one in the pot and fry them turning quickly before getting too brown. As soon as they are out of the pan place in sugar while still hot and put on the side.
